Let's cook another Italian dish, a caprese salad made by Chef Michele Broggi from Moe Leto.

A bright tomato and cheese salad would be excellent with any mix of bright and flavorful cherry tomatoes in a shaker from Moe Leto. Tomatoes need to be peeled from their skins; to do this, blanch the cherry tomatoes by immersing them in boiling water and then dipping them in ice water, which will make removing the skins easy.

  We put the peeled cherries on a plate, they need to be salted and drizzled with olive oil. Salt the avocado slices, fry them in olive oil and send them to the tomatoes. Add a pinch of cherry tomatoes stewed with basil, salt and pepper and a couple of thin slices of mango to the rest of the ingredients, place a cap of strachatella cheese on top of the tomatoes, avocado and mango. It's time to supplement the dish with "tomato water" dressing.

To prepare this dressing, you need to turn tomatoes into a puree and leave the resulting puree under foil in the fridge for 24 hours, strain the separated juice to remove the pulp. Add a little orange peel grated on a fine grater to the tomato juice to add flavor.

The final touches: drizzle the cheese with olive oil and add a pinch of ground black pepper and garnish with basil. Your Chef's Italian Caprese Salad is ready, bon appetit!
